Types
These oils are obtained from the fruit of olive tree by implementing mechanic or physical operations in a temperature that will not change its natural features.
Extra virgin olive oil is made simply by crushing olives and extracting the juice. It is the only cooking oil that is made without the use of chemicals and industrial refining.
It is a mixture of refined olive oil and virgin olive oils which can be consumed in its natural state. Its color can be varied from green to yellow and it has unique taste.
It is the olive oil obtained from virgin olive oils by refining methods which do not lead to alterations in the initial glyceridic structure. It has a free acidity of not more than 0.3 grams for 100 grams.
